After a long day at work, the last thing you want to do when you get home and finally begin to unwind is stand over a hot oven to cook a tasty meal. You know you should, but it is just so much darn work. That’s why many of us end up ordering delivery.

When you find an easy dinner recipe, though, you make sure to hold onto it! A recipe that’s both delicious and simple is worth the time and minimal effort, because it makes the temptation to pick up the phone and call for pizza a thing of the past.

This glorious Hasselback chicken Caprese recipe is going to become a regular in the dinnertime rotation once you see how easy it is to make. Your mouth will be watering by the end of this one!

To make this recipe, all you need is fresh mozzarella, tomato, pesto, cream, basil leaves, and chicken breasts. That’s a grocery list that is beyond easy to remember! First things first: Take your fresh ball of mozzarella cheese and cut it into slices of medium thickness.

Once you’ve done this, wipe off your knife, clean up any excess moisture on your cutting board, and then slice the tomatoes in the same medium thick slices that you did when you cut up your ball of cheese.

Now that you have prepared the tomato and mozzarella cheese slices, it is time to prep the chicken breasts. Remove any skin that may be attached, and put the chicken on a new cutting board. You’re going to make vertical slices along the chicken breast. Be sure not to cut the chicken all the way through!

When you’re done, the chicken should look like the picture below. Now, put a slice of tomato and a slice of cheese inside each slit you have made in the chicken breast. Finish the chicken off by adding one fresh basil leave inside each slit along with the tomato and the cheese.

When you are done stuffing your chicken with cheese, tomatoes, and basil, it should look like the photograph below. Now, take your cream and pour it into a casserole dish. Make sure there is enough cream to cover the bottom of the dish.

Now, before you place the chicken breast inside of the casserole dish, top the heavy cream with a sprinkling of parmesan cheese. You don’t have to add the cheese, but if you want to it makes for a nice touch.

Pesto sauce is also an optional ingredient but the rich flavor of the ground basil, pine nuts, parmesan, and olive oil will really accentuate the flavors brewing inside of your chicken breasts. It’s definitely worth adding!
