Whether you’re whipping up a cake or frittata, eggs are a culinary staple for pretty much every kind of meal. Of course, they can be just as tasty on their own, too. They’re incredibly versatile; you can boil them, poach them, or fry them; and they’re full of enough protein, vitamin D, and omega-3 fatty acids to get you going.
Now there’s a new, delicious way to prepare eggs, and it’s unlike anything you’ve ever seen before. Not only is it super easy, but it helps you store your eggs for a longer period of time.
You’re going to want to drop everything and make a beeline for your kitchen when you see this method…
To begin, combine one cup of salt and one cup of sugar in a bowl. Mix well, and reserve half of the mixture in a small baking dish.
Separate four egg yolks, carefully placing each on top of the sugar and salt mixture in the baking dish. Sprinkle the rest of the mixture over the yolks until completely submerged. Cover the dish with plastic wrap and refrigerate for four days.
After four days, remove the yolks from the fridge. Gently brush off the salt-sugar mixture with a pastry brush, and wash off the remaining mixture under cold water.
Place the yolks on a paper towel to soak up any excess water. Transfer them to a parchment-lined baking sheet, and bake at 150°F for two hours.
The egg yolks should now look a bit like dried apricots and feel semi-firm. If you’re not planning on using them immediately, store them in an airtight container in the refrigerator for up to two weeks.
Voila! You’ve now made cured egg yolks. Now you have another delicious reason to stay healthy. The best part? They last for so long, you’ll have plenty of time to come up with a variety of recipes.
